  • Super Food Salad

    Our talented team rider Jessica has been active in the kitchen and come up with this yummy super-food lunch, jam-packed with healthy veggies and quinoa.

    Super Food Salad

    (serves 1)

    Dressing choices:

    Herb dressing: A handful of basil, arugula, chive, spinach, parsley and olive oil.

    Lime och ginger dressing: Lime juice and zest, grated ginger, garlic, salt and pepper, soya yogurt and a little agave syrup.

    Sea grass noodle dressing: Cherry tomatoes, spring union, basil, garlic, olive oil.

    Directions:

    Roast the butternut squash and beetroot in the oven at 200° until soft. Cook the quinoa and seaweed noodles per package directions. Blanch the broccoli and cauliflower. Plate the squash, beetroot, quinoa, seaweed noodles, broccoli and cauliflower. Top with some shaved zucchini, roasted pumpkin seeds and raw chia seeds. The dressings to top the salad with are made in a blender and can be tasted and altered according to your taste preferences.

  • Sunshine Pie with Golden Berries

    Our wonderful rawfood expert Jessica has whipped up a delicious dessert and it's chock full of nutritious, natural goodness!

    Sunshine Pie with Golden Berries

    Crust/bottom layer:

    4 dl Sunshine Roasted Sunflower Kernels

    3 dl Persistently Perfect Pumpkin Seeds

    1 tsp vanilla extract

    2 tbsp Organic Love Coconut Oil

    1/2 tsp salt

    2 tbsp agave syrup

    Filling:

    2 dl roasted coconut flakes

    1/2 dl Kick-Ass Chia Seeds

    3 dl Size Doesn't Matter Golden Berries

    6 dl coconut cream

    2 tbsp Organic Love Coconut Oil

    5 Delicious Dates

    1 bag of saffron

    Directions:

    Grease a baking pan with coconut oil and cover it with coconut flakes. Grind Persistently Perfect Pumpkin Seeds and Sunshine Roasted Sunflower Kernels in a blender and add the rest of the ingredients for the crust. Press the crust into the baking pan. In a separate bowl, mix together coconut flakes, Kick-Ass Chia Seeds and Delicious Dates. Add all other ingredients for the filling. Pour onto the base and refrigerate for at least 4 hours. Decorate with raspberries, Go Goji Berries and coconut flakes.

  • "Hey Pesto" Raw Zucchini Pasta with Cashew Sauce

    "Hey Pesto" Raw Zucchini Pasta with Cashew Sauce

    4 servings

    Ingredients:

    • 800 gr shaved zucchini
    • 400 gr seaweed noodles

    Almond pesto:

    • 1 dl Miss Valencia Almonds
    • 1 garlic clove
    • 0.5 tsp sambal oelek
    • 1.5 tbsp olive oil
    • 4 tomatoes
    • 2 dl basil
    • 0.5 tsp salt

    Cashew dressing:

    • 2 dl Perfect Cashews (soak overnight in water)
    • A pinch of salt and white pepper
    • 1 tsp crushed garlic)

    Directions:

    For the pesto, mix Miss Valencia Almonds and garlic with sambal oelek and olive oil in a food processor. Cut the tomatoes and remove the seeds. Chop the basil and mix it and the tomatoes with the almonds and garlic.

    For the cashew dressing, grind the Perfect Cashews in a food processor and add water until smooth and creamy. Add more water if neccessary.

    Shave the zucchini in thin slices using a mandoline or vegetable slicer and prepare the noodles according to the directions on the package. Mix noodles and zucchini with the cashew dressing. Top with pesto, fresh cherry tomatoes, olives and some fresh basil.
